Replying to my own post here but wanted to give an update to others if they come across this post in the future. The U-boot issue is a problem with Kirkstone and the version of u-boot that it pulls in for the CM3. The defconfig is for the pi 3 and this causes issues as the pinout are different and can stop the device from booting
