for the network I'll check out ntmui but I need the configuration to stay permanent.

nmtui is a curses based front end. Changes you make are persistant.
Also the desktop is incredibly sluggish and I figure it's because there's not enough ram (the cpu is almost idle; "waiting cpu" is high when looking at "top"). I need the desktop to configure the software I'm using (pure-data) which is a graphical programmation software; and then when it's working as intended the raspberry will run headless without the need for a gui/desktop (virtual or not). I'm now wondering if I shouldn't use a 32 bit / lighter version because it's ten times slower with a zero 2 directly on the machine than my experience on the zero 1 using vnc. I have hang ups during sometimes several minutes. also I have an object I need that don't seem to be ported to 64 bit and I'd need to compile it from source.
I'm coming back every 4/5 years to do a new project with a pi and I always have to start from scratch; it's a bit frustrating.

If it's just for software/OS configuration why not use a more powerful Pi or one with more RAM for that? 32 bit RPiOS Bookworm should boot on all models (but will use a 64 bit kernel on Pi5/500). Bullseye 32 bit should boot on everything prior to the Pi5.

Earlier release should boot on whatever model were current at their time of release and on earlier models.

It's unclear from your posts whether you're using a zero(W) or a zero2W. A zero2W will run a 64 bit OS, the zero(W) will not.
