so a single I2C bus should be sufficient.The manual says that the default address is 0x62, but can be changed to any other valid i2c address. So this should be possible.Can't you change the address of your sensor so there can be more than one on the bus?
Could not answer the question myself as I was unable to locate the data sheet (and didn't want to spend too much effort searching for it).
-> either one I2C bus each or a number of them - with reprogrammed addresses - on as single bus.
