You probably should start by asking yourself what margin of error is acceptable? Example: will 0.5 % deviation in power measurement be acceptable for your project? If so, a cheap 4-channel ADC (e.g a MPC3004) is quite capable when used with a Pi Pico. Note I am assuming that the C++ SDK is being used. Using Micropython may be problematic.
