Wouldn't the first step be to try it and see ?The thing is I want to use it with 3-4 clients and I'm not sure the Pi3 will be enough.
I would expect the main issues to be performance and memory. I am not sure how booting from SSD would improve things if that is the case. And you might not need to get involved in that faff if a Pi 4B or Pi 5 is what you need.
Issues related to SD Cards seem to be over-stated IMO.
