I think if I can do the following it would work

1. Set up a subdomain MinIO.mydomain.com
2. Set up a reverse proxy so incoming trafic from that subdomain gets routed to a port associated with wiregaurd connection with my pi
3. Set up my pi to take the incoming trafic from wiregaurd and pass it to my local instance.

Would that be doable you think?
Maybe, but I'm not sure I fully understood.

First I would try to set up up WireGuard between the Pi and the virtual private server. It's easy if one end of the VPN has a statically assigned publicly routable IP number. That would be the VPS.

I have good luck following the quick start:

WireGuard appears as a network device that can send and receive to separate static IP numbers.

After set up your Pi will have two IP numbers: the one from the home network plus one on the VPN. Your virtual private server will also have two IP numbers: the publicly routable one plus one on the VPN. Then it should be possible to reach the Pi from the VPS by using its IP number on the VPN.
