I used to search on Digikey for SLC flash cards but now Adafruit sell them 64-512MB.It would be nice if you give brands and part# for these SLC cards because long term stability has always be my main reluctance when it comes to running a Raspberry. I'm not aware of ReadOnly OSes.
At least I assume they are SLC.
Most Industrial temperature range MicroSD card brands in the smaller sizes are SLC.
They are better if you need lots of read/writes as the SLC have more wear cycles, lots more.
Read only OS can be done even with the Pi OS but I prefer those with it built in, TinyCore, Ultibo etc.
You can even make/compile your own OS with Buildroot, Yocto etc
I have set up Pi's to netboot as well, that means you need an Boot file server running 24/7.
