Bookworm changed to Wayland which is incompatible with the Mumble hotkey feature. It was implemented by snooping on all keyboard input which is not allowed under Wayland.
If you must have this feature then you'll need to switch back to X11 using raspi-config or wait for the patch to be merged then build your own copy of Mumble.
