So the question would be, how would I accomplish this using a Raspberry Pi? I will most likely get a Pi 5 with either 8gb or 16gb ram.

plus a suitable CM5 module with 8GB RAM and Wifi and preferrably EMMC. EMMC storage is faster and much more reliable than SD cards.

This gives you a compact, robust system. The second port is connected via PCIe and as fast and reliable as the first one.
