Sounds to me like Win10 recognises the USB adapter but OpenWRT on your Pi does not.

I don't use OpenWRT or that adapter so can only make some troubleshooting suggestions:
  1. With the same OTG adapter does your zeroW recongise other USB devices?
  2. If you can log in to your zeroW does your adapter show up in the output of sudo lsusb?
  3. Are there any related error messages in /var/log/syslog*?
  4. Are there any related error messages in the systemd jounral?
  5. Are there any related error messages in the output from dmesg?
  6. Have you tried that adapter and the above with RPiOS?
  7. Have you tried asking, and searching, OpenWRT's support channels?

Regarding points 3 and 4, I don't know which of those OpenWRT uses so one may be missing.
