Beginners • RPi3/Stretch OS - what is best built in keyboard to use?

I have an older project that uses a touchscreen. Whole time its been using a bluetooth keyboard with built in mouse, I would like to try and see how the built in keyboard feature works, when dealing with some 'input fields'.

Being an old RPi3 and Stretch OS, is best to use:

Florence?
OnBoard?

Any other (easy/bug free) options to try perhaps?

To clarify a bit more on my project, its boots into KIOSK mode, and starts/loads a locally hosted webpage, in Chromium (so all interaction is done in there. Most of just clicking buttons/assuring pop-ups..etc.. but when in the 'admin mode'.. you are editing things, and saving/updating things in a local database (LAMP install).. that does require you typing in certain things.)

* When it loads, does it cover whole screen? (Im using a small 10'1" 1280x800 resolution screen, so Im curious as to how that would actually work?)
