I also have the pimoroni hat, and the ssd than came with their package. You should know that the ribbon cable runs over the wifi antenna, and for me is blocking the reception to it. But it doesn't matter because I use ethernet anyway,I use the Pimoroni adaptor which fits underneath the Pi's board (so you can fit cooling stuff on top of the Pi easily).
The card is a Samsung 990 Pro 1TB (2280).
Gen3 appears to be the default now (double the speed of Gen2) - it is 100% stable.
The only downside of NVME is fitting the ribbon cable!
Its very very fiddly, but has worked OK both times I have done it.
