There is an ultimate failsafe in all models of Pi with a separate SMPS (PMIC on Pi 3B+/4/5, dual switcher on Pi 1B+/2/Zero2/3) where if the internal temperature of the SMPS exceeds ~125C the board will be forcibly powered off. This is independent of the SOC temperature sensor (but tracks the SOC temperature due to the thermal coupling through the PCB) and does not rely on any firmware or software intervention.
