After installing and configuring the xserver-xorg-legacy, I started my kiosk.sh script using the service method (one of the 3 you suggest in section 5.2.4 of your boot.pdf).
Before that I also had to install the xinit package (since I do not had yet the startx on my system).
Finally I had to edit my kiosk script a bit, namelly the chromium options: removing the --ozone-platform=wayland (for obvious reasons) and adding --window-size=1920,1080 (since for some reason the browser was showing in just the left half-part of my monitor).
But as you said, this is using X11 rather than Wayland. I presume that the Wayland equivalent will show up in section 6.2 of your pdf, right?
I will start now the next war: have a second Chromium instance, showing a second webpage in a second monitor connected to my RPi 5.
