I am kind of shocked that there isn't built in tool (Control Centre or in raspi-config) that will dim then turn off the keyboard backlight at idle and then resume when there is activity

Me too, first thing I thought of when I set the screen blanking on. Now the screen blanks and the LEDs turn off.

You saved me some work by posting this. Thank you!
