I am relatively new to the pi game.
I was reading about the possible ways to power on a pi zero 1 w and everyone mentions that the USB connection is the safest option due to it having circuit protections.
Nope. There's no protection circuitry on any of the zero series models. All +5V pins are directly connected to each other.
If you're intending to feed signals from the 5 - 12V system into the Pi's GPIO you'll need to level shift them down to 3.3V. Anything higher will damage your Pi.
